- 1 cup fresh pineapple, diced
- 1 tablespoon sugar

Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- Combine the rinsed rice, coconut milk, water, sugar, and salt in a medium saucepan.
- Bring the mixture to a boil over medium heat.
- Simmer gently for 15-20 minutes, covered, until liquid is absorbed.
- Fluff the rice with a fork after cooking.
- Add the diced fresh pineapple and stir gently.
- Serve warm with your favorite dishes.
Notes
For creamier texture, adjust the coconut milk as needed. Store leftovers in an airtight container in the refrigerator for up to 3 days.
