Ingredients

  • 1 can (13.5 oz) coconut milk

  • 1 cup fresh pineapple, diced
  • 1 tablespoon sugar

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. Combine the rinsed rice, coconut milk, water, sugar, and salt in a medium saucepan.
  3. Bring the mixture to a boil over medium heat.
  4. Simmer gently for 15-20 minutes, covered, until liquid is absorbed.
  5. Fluff the rice with a fork after cooking.
  6. Add the diced fresh pineapple and stir gently.
  7. Serve warm with your favorite dishes.
