Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup shredded cabbage
  • ½ cup diced tomatoes
  • ¼ cup fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. Combine the shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper in a large bowl. Marinate for 15-30 minutes.
  2. Preheat your grill to medium-high heat.
  3. Thread the marinated shrimp onto skewers.
  4. Grill the shrimp for 2-3 minutes on each side until opaque and cooked through.
  5. Warm the corn tortillas on the grill for about 30 seconds on each side.
  6. Assemble the tacos by placing grilled shrimp on a warm tortilla and topping with cabbage, tomatoes, and cilantro.
  7. Serve with lime wedges on the side.
