Description
This Easy & Healthy Orzo Chicken Dinner is a one-pan recipe with juicy chicken, tender broccoli, and creamy orzo ready in just 30 minutes.
Ingredients
2 chicken breasts, cubed
1 cup orzo pasta
2 cups broccoli florets
2 cups chicken broth
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1/2 tsp paprika
Salt & pepper, to taste
1/2 cup parmesan cheese (optional)
Instructions
1. Season chicken with spices.
2. Heat olive oil in skillet, cook chicken until golden. Remove.
3. Toast orzo in same pan.
4. Add chicken broth, bring to simmer.
5. Stir in broccoli and return chicken to pan.
6. Cook until orzo is tender and chicken reaches 165°F.
7. Let rest 5 minutes before serving.
Notes
You can substitute broccoli with spinach or zucchini.
For extra creaminess, stir in cream cheese instead of parmesan.
