Ingredients

  • 4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 3/4 cups buttermilk
  • 1 cup currants
  • 2 tablespoons sugar (optional)
  • 1 tablespoon melted butter (optional for brushing)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Mix dry ingredients: In a large bowl, combine the flour, baking soda, salt, and optional sugar.
  3. Add the currants: Stir in the currants once dry ingredients are mixed.
  4. Add the buttermilk: Gradually pour in the buttermilk while mixing.
  5. Knead gently: Turn the dough onto a floured surface and knead just enough for it to come together.
  6. Shape the loaf: Form the dough into a round loaf.
  7. Prepare for baking: Place the dough on a baking sheet lined with parchment paper.
  8. Cut a cross: Cut a deep cross shape on the top of the loaf.
  9. Bake: Bake for 30-35 minutes until golden brown.
  10. Finish and cool: Brush with melted butter if desired and let cool before slicing.
