A quick and easy Irish Soda Bread featuring sweet currants, perfect for any meal.
Ingredients

- 4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 3/4 cups buttermilk
- 1 cup currants
- 2 tablespoons sugar (optional)
- 1 tablespoon melted butter (optional for brushing)
Instructions
- Preheat the oven to 425°F (220°C).
- Mix dry ingredients: In a large bowl, combine the flour, baking soda, salt, and optional sugar.
- Add the currants: Stir in the currants once dry ingredients are mixed.
- Add the buttermilk: Gradually pour in the buttermilk while mixing.
- Knead gently: Turn the dough onto a floured surface and knead just enough for it to come together.
- Shape the loaf: Form the dough into a round loaf.
- Prepare for baking: Place the dough on a baking sheet lined with parchment paper.
- Cut a cross: Cut a deep cross shape on the top of the loaf.
- Bake: Bake for 30-35 minutes until golden brown.
- Finish and cool: Brush with melted butter if desired and let cool before slicing.

Store at room temperature for up to two days or freeze for longer preservation.
