Ingredients

  • 1 ½ cups digestive biscuits, crushed
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • Toppings (strawberries, blueberries, raspberries, chocolate sauce, caramel)

Instructions

  1. Prepare the crust: Crush digestive biscuits and mix with melted butter. Press into the bottom of a springform pan.
  2. Make the cheesecake filling: Beat softened cream cheese until smooth, add powdered sugar gradually, then mix in vanilla.
  3. Whip the cream: Whip heavy cream until soft peaks form, being careful not to over-whip.
  4. Combine everything: Gently fold the whipped cream into the cream cheese mixture until fully combined.
  5. Assemble the cheesecake: Pour the filling over the biscuit crust and smooth the top.
