Instructions
- Prepare the crust: Crush digestive biscuits and mix with melted butter. Press into the bottom of a springform pan.
- Make the cheesecake filling: Beat softened cream cheese until smooth, add powdered sugar gradually, then mix in vanilla.
- Whip the cream: Whip heavy cream until soft peaks form, being careful not to over-whip.
- Combine everything: Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Assemble the cheesecake: Pour the filling over the biscuit crust and smooth the top.
- Chill the cheesecake: Cover and refrigerate for at least 4 hours, preferably overnight.
- Serve and enjoy: Release the cheesecake from the springform pan, top with toppings, and slice to serve.
