A delicious, easy, and healthy one-pan meal featuring balsamic-glazed chicken, creamy orzo, and vibrant vegetables ready in under 35 minutes!
Ingredients
2 chicken breasts or thighs
1 cup orzo
2 tbsp olive oil
1/4 cup balsamic vinegar
2 tbsp honey
2 garlic cloves, minced
1 tsp Dijon mustard
1/2 tsp oregano
1 cup cherry tomatoes
1 cup zucchini, sliced
1 cup spinach
2 cups chicken broth
Salt and pepper to taste
Instructions
1. Whisk balsamic vinegar, honey, mustard, garlic, and olive oil to make marinade.
2. Marinate chicken for 15 minutes.
3. Sear chicken in a large skillet until golden.
4. Add vegetables and orzo; sauté for 2 minutes.
5. Pour in broth and remaining marinade.
6. Simmer for 10–12 minutes until orzo is tender and chicken is cooked.
7. Rest 5 minutes before serving.
Notes
You can substitute spinach with kale or add a sprinkle of feta for a Mediterranean touch.
