This Easy One Pot Creamy Tomato Pasta is a quick, comforting, and creamy dinner perfect for busy weeknights.
Ingredients
12 oz pasta (penne or rigatoni)
2 cups crushed tomatoes
1 cup vegetable broth
1/2 cup heavy cream (or dairy-free alternative)
1 medium onion, diced
3 garlic cloves, minced
2 tbsp olive oil
1 tsp Italian seasoning
Salt & black pepper, to taste
Fresh basil for garnish
Instructions
1. Heat olive oil in a large pot and sauté onion and garlic until fragrant.
2. Stir in crushed tomatoes, Italian seasoning, salt, and pepper.
3. Add pasta and vegetable broth, making sure pasta is submerged.
4. Simmer for 10–12 minutes, stirring occasionally, until pasta is al dente.
5. Lower heat, stir in cream, and cook 2 more minutes until sauce thickens.
6. Garnish with fresh basil and serve hot.
Notes
For extra creaminess, add more cream or Parmesan.
Use coconut cream for a dairy-free version.
Store leftovers in an airtight container for up to 3 days.
