Ingredients

- 2 lbs beef chuck or brisket
- 3 dried guajillo chilies
- 2 dried ancho chilies
- 1 onion, quartered
- 4 cloves garlic
- 2 cups beef broth
- 1 tsp cumin
- 1 tsp oregano
- Salt to taste
- Corn tortillas
- Oaxacan cheese or mozzarella, shredded
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Toast the dried chilies in a pot without oil for about 2-3 minutes until fragrant.
- Soak the toasted chilies in hot water for 15-20 minutes until softened.
- Blend the chilies, onion, garlic, beef broth, cumin, oregano, and salt until smooth.
- Prepare the beef in a pot or slow cooker, coating it with the chili mixture and cooking on low for 4-6 hours until tender.
- Shred the cooked beef and set aside. Dip the corn tortillas in the leftover consomé before cooking.
- Cook the tortillas on a skillet, adding shredded beef and cheese, folding them, and cooking until crispy.
- Serve hot, garnished with cilantro and lime wedges.

Serve with consomé for dipping and consider pairing with rice and beans for a complete meal.
