Description

Delicious birria tacos filled with rich, slow-cooked beef and flavorful spices, perfect for gatherings and family meals.


Ingredients

  • 2 lbs beef chuck or brisket
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion, quartered
  • 4 cloves garlic
  • 2 cups beef broth
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt to taste
  • Corn tortillas
  • Oaxacan cheese or mozzarella, shredded
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Toast the dried chilies in a pot without oil for about 2-3 minutes until fragrant.
  2. Soak the toasted chilies in hot water for 15-20 minutes until softened.
  3. Blend the chilies, onion, garlic, beef broth, cumin, oregano, and salt until smooth.
  4. Prepare the beef in a pot or slow cooker, coating it with the chili mixture and cooking on low for 4-6 hours until tender.
  5. Shred the cooked beef and set aside. Dip the corn tortillas in the leftover consomé before cooking.
  6. Cook the tortillas on a skillet, adding shredded beef and cheese, folding them, and cooking until crispy.
  7. Serve hot, garnished with cilantro and lime wedges.

Notes

Serve with consomé for dipping and consider pairing with rice and beans for a complete meal.
