Description

Delicious gluten-free banana cookies, naturally sweetened and packed with oats, nuts, and chocolate chips.


Ingredients

  • 2 ripe bananas
  • 1 cup gluten free flour
  • 1/2 cup chocolate chips
  • 1/2 cup walnuts, chopped
  • 1/4 cup maple syrup or agave nectar
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the bananas in a mixing bowl until smooth.
  3. Combine the melted coconut oil, maple syrup, and vanilla extract with the mashed bananas.
  4. Mix the gluten free flour, baking soda, cinnamon, and salt in another bowl.
  5. Combine the dry ingredients with the banana mixture until just mixed.
  6. Fold in the chocolate chips and walnuts.
  7. Scoop tablespoon-sized dollops of dough onto the baking sheet.
  8. Bake for 10-12 minutes until the edges are golden brown.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for 3-4 days or freeze for up to 3 months.
