Delicious gluten-free banana cookies, naturally sweetened and packed with oats, nuts, and chocolate chips.
Ingredients

- 2 ripe bananas
- 1 cup gluten free flour
- 1/2 cup chocolate chips
- 1/2 cup walnuts, chopped
- 1/4 cup maple syrup or agave nectar
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mash the bananas in a mixing bowl until smooth.
- Combine the melted coconut oil, maple syrup, and vanilla extract with the mashed bananas.
- Mix the gluten free flour, baking soda, cinnamon, and salt in another bowl.
- Combine the dry ingredients with the banana mixture until just mixed.
- Fold in the chocolate chips and walnuts.
- Scoop tablespoon-sized dollops of dough onto the baking sheet.
- Bake for 10-12 minutes until the edges are golden brown.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.

Store cookies in an airtight container at room temperature for 3-4 days or freeze for up to 3 months.
