Instructions
- Prepare the marinade: In a bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, salt, and pepper. Whisk the ingredients together until well mixed.
- Marinate the chicken: Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring that each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 4 to 6 hours or overnight.
- Preheat the grill or oven: If grilling, preheat your grill to medium-high heat. If baking, preheat your oven to 400°F (200°C).
- Cook the chicken: For grilling, remove the chicken from the marinade, allowing any excess to drip off. Grill for about 6 to 7 minutes on each side or until the internal temperature reaches 165°F (75°C). For baking, place the marinated chicken on a greased baking sheet and bake for approximately 25 to 30 minutes.
- Rest the chicken: Once cooked, let the chicken rest for 5 minutes to retain the juices.
- Garnish and serve: Slice the chicken, sprinkle with fresh parsley, and serve with additional lemon wedges if desired.
