Description
These grilled pesto chicken wraps are loaded with shredded chicken, basil pesto, avocado, italian seasoning and tender artichoke hearts. Grilled until warm and crispy, perfect for a quick, delicious lunch.
Ingredients
1/2 cup grated mozzarella (dairy free if needed)
1/3 cup basil pesto, store-bought or homemade
1 cup shredded rotisserie chicken (or leftover)
1/2 cup canned artichoke hearts, chopped
1 avocado, pitted and sliced
2 tsp Italian seasoning
2 large flour tortillas
Arugula or fresh basil (optional)
Oil for grilling
Instructions
In the center or each tortilla, layer mozarella, basil pesto, shredded chicken, artichoke hearts and sliced avocado. Sprinkle with italian seasoning and top with a handful of arugula or fresh basil.
Preheat a grill pan or skillet over medium high heat. Fold the sides of the tortilla inward and roll it up like a burrito. Brush both sides with oil.
Grill the wraps for 4-6 minutes on each side or until golden brown and crispy. Serve warm.
