Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup salsa verde
  • 1 cup shredded Pepper Jack cheese
  • Salt and pepper to taste
  • Olive oil
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Prepare the chicken by rubbing with olive oil and seasoning with salt and pepper.
  3. Grill the chicken breasts for 6-7 minutes on one side, then flip and grill for another 6-7 minutes until internal temperature reaches 165°F (75°C).
  4. Add salsa verde over each chicken breast and top with shredded cheese in the last few minutes of grilling.
  5. Remove from the grill and let rest for a few minutes before serving, garnished with fresh cilantro.

Notes

For extra flavor, consider marinating the chicken in salsa verde for a few hours. Use a meat thermometer for accuracy.
