- 4 chicken breasts
- 1 cup salsa verde
- 1 cup Pepper Jack cheese, shredded
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Preheat the grill to medium-high heat.
- Prepare the chicken by brushing it lightly with olive oil and seasoning with salt and pepper.
- Grill the chicken for about 6-7 minutes on one side, then flip and grill for another 6-7 minutes until it reaches an internal temperature of 165°F (75°C).
- Add salsa verde on top of each chicken breast during the last few minutes of grilling.
- Melt the cheese by closing the grill lid for a couple of minutes.
- Rest the chicken for about 5 minutes after removing it from the grill.
- Garnish with freshly chopped cilantro before serving.
Notes
Marinate the chicken for extra flavor and use a meat thermometer to check doneness.
