Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup salsa verde
  • 4 slices pepper jack cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a mixing bowl, combine olive oil, garlic powder, cumin, salt and pepper.
  3. Rub the mixture over the chicken breasts until evenly coated.
  4. Place the seasoned chicken on the grill and cook for 5-7 minutes on each side.
  5. Add a slice of pepper jack cheese during the last minute of grilling.
  6. Remove the chicken and top with salsa verde.
  7. Garnish with cilantro and serve warm.

Notes

For extra flavor, marinate the chicken for at least 30 minutes before grilling. Use fresh salsa verde for the best taste.
