Description

These Healthy Banana Muffins are naturally sweetened with ripe bananas and can be customized with your favorite mix-ins.


Ingredients

  • 2 ripe bananas
  • 1/3 cup melted coconut oil
  • 1/2 cup sugar or honey
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • Optional mix-ins: dark chocolate chips, walnuts, or nuts

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the bananas in a mixing bowl until smooth with a few lumps.
  3. Add the melted coconut oil, chosen sweetener, vanilla extract, and egg to the mashed bananas, mixing until well combined.
  4. Sprinkle the baking soda and salt over the wet mixture and gently stir to combine.
  5. Incorporate the all-purpose flour gradually, folding it in until just combined to avoid overmixing.
  6. Optionally add in any mix-ins like chocolate chips or nuts and fold them in gently.
  7. Fill each muffin cup about 2/3 full with the batter.
  8. Bake for 18-20 minutes, checking with a toothpick for doneness.
  9. Cool for a few minutes in the pan before transferring to a wire rack to cool completely.

Store muffins in an airtight container at room temperature for up to two days, or in the refrigerator for up to a week.
