These Healthy Banana Muffins are naturally sweetened with ripe bananas and can be customized with your favorite mix-ins.

- 2 ripe bananas
- 1/3 cup melted coconut oil
- 1/2 cup sugar or honey
- 1 teaspoon vanilla extract
- 1 egg
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- Optional mix-ins: dark chocolate chips, walnuts, or nuts
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mash the bananas in a mixing bowl until smooth with a few lumps.
- Add the melted coconut oil, chosen sweetener, vanilla extract, and egg to the mashed bananas, mixing until well combined.
- Sprinkle the baking soda and salt over the wet mixture and gently stir to combine.
- Incorporate the all-purpose flour gradually, folding it in until just combined to avoid overmixing.
- Optionally add in any mix-ins like chocolate chips or nuts and fold them in gently.
- Fill each muffin cup about 2/3 full with the batter.
- Bake for 18-20 minutes, checking with a toothpick for doneness.
- Cool for a few minutes in the pan before transferring to a wire rack to cool completely.
Notes
Store muffins in an airtight container at room temperature for up to two days, or in the refrigerator for up to a week.
