Ingredients

  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar (or less to taste)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • Optional mix-ins (dark chocolate chips, nuts, etc.)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the muffin tin by lining it with paper liners.
  3. Mash the ripe bananas in a mixing bowl until smooth.
  4. Add the melted butter to the mashed bananas and stir until combined.
  5. Mix in the baking soda and a pinch of salt.
  6. Combine the sugar, egg, and vanilla extract, stirring until well-mixed.
  7. Add the all-purpose flour gradually until just incorporated.
  8. Fold in any optional mix-ins if used.
  9. Fill the muffin tin with batter, filling each cup about 2/3 full.
  10. Bake for 18-20 minutes, checking for doneness with a toothpick.
  11. Cool in the tin for a few minutes before transferring to a wire rack.
