Ingredients

- 3 ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar (or less to taste)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- Optional mix-ins (dark chocolate chips, nuts, etc.)
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the muffin tin by lining it with paper liners.
- Mash the ripe bananas in a mixing bowl until smooth.
- Add the melted butter to the mashed bananas and stir until combined.
- Mix in the baking soda and a pinch of salt.
- Combine the sugar, egg, and vanilla extract, stirring until well-mixed.
- Add the all-purpose flour gradually until just incorporated.
- Fold in any optional mix-ins if used.
- Fill the muffin tin with batter, filling each cup about 2/3 full.
- Bake for 18-20 minutes, checking for doneness with a toothpick.
- Cool in the tin for a few minutes before transferring to a wire rack.
