Description
A healthy and vibrant quinoa salad with fresh vegetables, perfect for a light lunch or as a side dish.
Ingredients

- 1 cup quinoa
- 2 cups vegetable broth or water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water in a fine mesh strainer to remove bitterness.
- Cook the quinoa with vegetable broth or water. Bring to a boil, then simmer for 15 minutes.
- Prepare the vegetables by chopping them and placing them in a large mixing bowl.
- Combine the cooked quinoa with the chopped vegetables in the bowl.
- Dress the salad with a mixture of lemon juice, olive oil, salt, and pepper.
- Taste and adjust the seasoning as necessary.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
Notes
This salad can be served chilled or at room temperature. Add grilled chicken or chickpeas for extra protein.
