Ingredients
2 tbsp olive oil or butter
1 onion, diced
3 cloves garlic, minced
4 cups diced Yukon Gold or Russet potatoes
4 cups vegetable broth
1 tsp fresh thyme
1 tsp parsley
2 cups shredded sharp cheddar cheese
Salt and pepper to taste
Instructions
1. Heat olive oil in a pot and sauté onion and garlic until fragrant.
2. Add diced potatoes, broth, and herbs. Simmer for 15 minutes until potatoes are tender.
3. Mash half the potatoes for creaminess, leaving some chunks.
4. Stir in cheddar cheese until melted and smooth.
5. Season with salt and pepper to taste.
6. Let rest 5 minutes before serving.
