A hearty, creamy Cheddar Garlic Herb Potato Soup packed with cheese, herbs, and tender potatoes—perfect for cozy nights.
Ingredients
2 lbs potatoes, peeled and diced
3 garlic cloves, minced
1 medium onion, chopped
2 tbsp butter
4 cups vegetable broth
1 cup heavy cream (or milk)
2 cups sharp cheddar cheese, shredded
1 tsp thyme (fresh or dried)
Salt and black pepper to taste
Fresh parsley or chives for garnish
Instructions
1. Melt butter in a large pot and sauté garlic and onion until fragrant.
2. Add diced potatoes, thyme, salt, and pepper. Stir well.
3. Pour in vegetable broth, bring to a boil, then simmer until potatoes are tender (15–20 min).
4. Mash half the potatoes in the pot for creaminess.
5. Stir in heavy cream and shredded cheddar until melted and smooth.
6. Let rest 5 minutes before serving, then garnish with parsley or chives.
Notes
You can make this vegetarian by using vegetable broth.
For extra creaminess, blend half the soup with an immersion blender.
Store leftovers in the fridge for 4 days or freeze for up to 2 months.
