Description

High Protein Banana bread is healthy and makes a satisfying breakfast, snack, or dessert! Loaded with protein, chocolate chips, and ripe bananas! It tastes just like classic banana bread except it’s better for you!


Ingredients

  • 2 ripe bananas

  • 1/2 cup plain or vanilla flavored yogurt regular or Greek

  • 1/3 cup honey or maple syrup

  • 2 whole eggs

  • 1 1/2 teaspoons vanilla extract

  • 1/4 cup coconut oil or butter melted

  • 1/2 cup oat flour

  • 3/4 cup whole wheat flour

  • 1/4 cup vanilla protein powder

  • 1 teaspoon ground cinnamon

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1/4 cup mini chocolate chips plus more to put on top


Instructions

 

  • Preheat oven to 350 degrees F. Line a loaf pan with parchment paper or generously coat with nonstick spray or brush with melted butter.

  • In a large bowl, mash the bananas together with a fork until smooth (it’s ok if there are a few lumps). With wooden spoon, stir in the yogurt, honey, eggs, vanilla extract, and melted butter or coconut oil. Mix until combined.

  • In a medium bowl, whisk together the oat flour, whole wheat flour, protein powder, cinnamon, baking powder, and baking soda. Mix together completely combined.

  • Fold the dry ingredients into the banana mixture just until combined and add chocolate chips.

  • Pour the batter into the prepared pan and top with more chocolate chips optional and bake for 45-50 minutes. Let cool, slice and enjoy!
