This High-Protein Spinach Artichoke Chicken Casserole is creamy, healthy, and packed with flavor—perfect for weeknight dinners or meal prep.
Ingredients
2 lbs boneless chicken breasts, cubed
3 cups fresh spinach
1 can artichoke hearts, drained & chopped
1 cup Greek yogurt
4 oz light cream cheese
1 cup shredded mozzarella
2 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
Salt & pepper to taste
Instructions
1. Preheat oven to 375°F (190°C) and grease a baking dish.
2. Cook chicken in olive oil until lightly golden.
3. Stir in spinach and artichokes until softened.
4. Mix Greek yogurt, cream cheese, and spices in a bowl.
5. Combine chicken mixture with sauce and transfer to dish.
6. Top with mozzarella and bake 20–25 minutes.
7. Let rest for 5 minutes before serving.

Make-ahead: Assemble casserole up to 24 hours ahead and bake when ready.
