This High-Protein Spinach Artichoke Chicken Casserole is creamy, cheesy, and packed with protein for a satisfying and nutritious dinner.
Ingredients
2 lbs boneless, skinless chicken breasts
1 ½ cups Greek yogurt
1 cup mozzarella cheese
½ cup Parmesan cheese
1 cup chopped spinach
1 cup chopped artichoke hearts
2 cloves garlic, minced
1 tbsp olive oil
Salt and pepper to taste
Instructions
1. Preheat oven to 375°F (190°C).
2. Grease a casserole dish and layer chicken evenly.
3. Mix yogurt, cheeses, spinach, artichokes, garlic, and spices.
4. Spread mixture over chicken.
5. Bake for 25–30 minutes until bubbly and golden.
6. Let rest 5 minutes before serving.
Notes
Store leftovers in the fridge up to 3 days.
Reheat in the oven or microwave before serving.
