This Spinach Artichoke Chicken Casserole is creamy, high-protein, and healthy—a family favorite perfect for weeknight dinners.
Ingredients
4 boneless chicken breasts
2 cups fresh spinach
1 cup artichoke hearts, chopped
4 oz cream cheese, softened
1/2 cup Greek yogurt
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan
2 tbsp olive oil
2 cloves garlic, minced
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp red pepper flakes (optional)
Instructions
1. Preheat oven to 375°F (190°C).
2. Grease a baking dish with olive oil.
3. Season chicken with salt, pepper, and garlic powder.
4. Sauté spinach in olive oil until wilted.
5. In a bowl, mix spinach, artichokes, cream cheese, Greek yogurt, garlic, and seasonings.
6. Place chicken in the dish and spread mixture on top.
7. Sprinkle with mozzarella and Parmesan.
8. Bake for 25–30 minutes until chicken reaches 165°F.
9. Let rest 5 minutes before serving.
