1 ripe avocado, sliced

4 slices bread (sourdough, ciabatta, or whole grain)

2 tablespoons honey

2 tablespoons Dijon mustard

1/2 teaspoon fresh lemon juice

1 tablespoon olive oil (optional, for toasting)

Salt to taste

Black pepper to taste

Lettuce or spinach leaves (optional)

Tomato slices (optional)


Instructions

1. Prepare the honey mustard by whisking together honey, Dijon mustard, and lemon juice in a small bowl. Let sit for 5 minutes to allow flavors to blend.

2. If toasting bread, lightly brush both sides with olive oil and toast in oven at 375°F for 3-5 minutes until golden, or use a toaster or skillet.

3. Slice the avocado in half, remove pit, and scoop out flesh. Cut into thin slices (about 1/4 inch thick). Season with salt and black pepper.

4. Pat turkey slices dry gently with paper towels if needed to remove excess moisture.

5. Spread honey mustard generously on both slices of bread to create a moisture barrier.

6. Layer turkey slices evenly on one slice of bread.

7. Arrange avocado slices on top of turkey.

8. Add optional lettuce, spinach, or tomato if desired.

9. Top with second slice of bread, mustard side down.

Notes

Turkey can be stored refrigerated up to 3 days. Buy medium-thick slices from the deli counter for best texture.
