This Honeycrisp Apple and Feta Salad combines crisp apples, tangy feta, and a light vinaigrette for a refreshing, 15-minute dish perfect for any season.
Ingredients
2 large Honeycrisp apples, thinly sliced
4 cups mixed greens
1/2 cup crumbled feta cheese
1/4 cup toasted walnuts or pecans
2 tbsp dried cranberries (optional)
3 tbsp olive oil
1 tbsp apple cider vinegar
1 tsp Dijon mustard
1 tsp honey
Salt and pepper to taste
Instructions
1. Slice apples thinly right before serving.
2. Whisk together vinaigrette ingredients.
3. Toss greens with dressing.
4. Top with apples, feta, nuts, and cranberries.

Notes
To prevent apples from browning, toss slices in a little lemon juice.
