Ingredients
2 cups all-purpose flour
2 cups freshly grated carrots
1 ½ cups brown sugar
1 cup vegetable oil
4 large eggs
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
½ tsp nutmeg
½ tsp salt
1 cup chopped walnuts (optional)
8 oz cream cheese, softened
½ cup unsalted butter, softened
3 cups powdered sugar
1 tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch pans.
2. Whisk flour, baking powder, baking soda, salt, and spices.
3. In another bowl, beat sugar, oil, and eggs until smooth.
4. Add dry mixture to wet mixture and combine.
5. Fold in grated carrots and walnuts.
6. Divide into pans and bake 30–35 minutes until toothpick comes out clean.
7. Cool completely before frosting.
8. Beat cream cheese and butter until creamy.
9. Gradually add powdered sugar and vanilla until smooth.
10. Frost cake between layers, top, and sides.
Notes
For a tropical variation, add pineapple and coconut.
Refrigerate cake for up to 5 days or freeze unfrosted layers for up to 2 months.
