Ingredients

2 tbsp olive oil

1 lb chicken thighs or breast

1 onion, chopped

2 carrots, diced

2 celery stalks, sliced

3 garlic cloves, minced

4 cups chicken broth

1 cup crushed tomatoes

1 tbsp parsley, chopped

1 tbsp lemon juice

Salt & pepper to taste


Instructions

1. Heat olive oil in a pot over medium heat.

2. Sear chicken until lightly golden.

3. Add onion, carrots, celery, and garlic; sauté for 5 minutes.

4. Pour in broth and crushed tomatoes; bring to a simmer.

5. Cook for 25–30 minutes or until chicken is tender.

6. Shred chicken, return to pot, and season with lemon, salt, and pepper.

7. Serve hot, garnished with parsley.

Notes

For a vegetarian version, use chickpeas and vegetable broth.

Store leftovers in the fridge for 4 days or freeze up to 3 months.
