Ingredients

- 1 lb ground beef or ground turkey
- 1/2 cup grated parmesan cheese
- 1/4 cup almond flour
- 2 cloves garlic, minced
- 1 egg
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
- 4 tablespoons butter
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine ground meat, grated Parmesan cheese, almond flour, minced garlic, beaten egg, chopped parsley, salt, and pepper.
- Shape the mixture into balls about one inch in diameter.
- In a skillet, heat olive oil and 2 tablespoons of butter; add the meatballs and brown on all sides for 5-7 minutes.
- Transfer the meatballs to a baking dish and bake for 10-15 minutes until cooked through.
- In the same skillet, add the remaining butter; optionally sauté additional garlic.
- Drizzle the garlic butter over the meatballs and garnish with parsley.
Notes
Serve with zoodles, cauliflower rice, or a fresh salad. Store in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months.
