Description

Juicy meatballs infused with garlic butter; perfect for those on a keto diet and easy to prepare for busy nights.


Ingredients

  • 1 lb ground beef or ground turkey
  • 1/2 cup grated parmesan cheese
  • 1/4 cup almond flour
  • 2 cloves garlic, minced
  • 1 egg
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • 4 tablespoons butter
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground meat, grated Parmesan cheese, almond flour, minced garlic, beaten egg, chopped parsley, salt, and pepper.
  3. Shape the mixture into balls about one inch in diameter.
  4. In a skillet, heat olive oil and 2 tablespoons of butter; add the meatballs and brown on all sides for 5-7 minutes.
  5. Transfer the meatballs to a baking dish and bake for 10-15 minutes until cooked through.
  6. In the same skillet, add the remaining butter; optionally sauté additional garlic.
  7. Drizzle the garlic butter over the meatballs and garnish with parsley.

Notes

Serve with zoodles, cauliflower rice, or a fresh salad. Store in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months.
