Description

A classic dessert featuring a tart, creamy Key lime filling in a graham cracker crust, topped with fresh whipped cream.

  • 2 tablespoons (24 grams) granulated sugar
  • 1/2 teaspoon (1.5 grams) kosher salt
  • 6 tablespoons (84 grams) unsalted butter, melted
  • 1 1/2 cups (468 grams) sweetened condensed milk
  • 1 1/2 tablespoons (4.5 grams) Key lime zest
  • 1/2 cup (120 grams) fresh Key lime juice
  • 4 large egg yolks (74 grams)
  • 1/2 teaspoon (2 grams) vanilla extract
  • 1/4 teaspoon kosher salt
  • 1 1/2 cups (360 grams) cold heavy whipping cream
  • 6 tablespoons (42 grams) confectioners’ sugar
  • 1/2 teaspoon (2 grams) vanilla extract
  • Garnish: Key lime slices

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the graham cracker crumbs, granulated sugar, and kosher salt in a large mixing bowl.
  3. Pour in the melted butter and stir until the mixture resembles wet sand.
  4. Press the crumb mixture into the bottom and up the sides of a 9-inch pie dish.
  5. Bake the crust for about 10 minutes, or until lightly golden. Remove and let cool.
  6. Whisk together sweetened condensed milk and Key lime juice in a medium bowl.
  7. Add the Key lime zest, egg yolks, and vanilla extract; whisk until smooth.
  8. Pour the filling into the cooled crust.
  9. Return the pie to the oven and bake for 15-17 minutes, until set but jiggles slightly in the center.
  10. Cool the pie at room temperature for about 30 minutes.
  11. Combine the cold heavy whipping cream, confectioners’ sugar, and vanilla extract in a large mixing bowl.
  12. Beat the cream mixture until stiff peaks form.
  13. Spread the whipped cream over the cooled pie.
  14. Garnish with Key lime slices.
  15. Chill the pie in the refrigerator for at least 4 hours or overnight.

Notes

For best flavor, use fresh Key lime juice. Chill thoroughly for optimal texture.
