- 1 1/2 cups (360 grams) cold heavy whipping cream
- 6 tablespoons (42 grams) confectioners’ sugar
- 1/2 teaspoon (2 grams) vanilla extract
- Garnish: Key lime slices
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the graham cracker crumbs, granulated sugar, and kosher salt in a large mixing bowl.
- Pour in the melted butter and stir until the mixture resembles wet sand.
- Press the crumb mixture into the bottom and up the sides of a 9-inch pie dish.
- Bake the crust for about 10 minutes, or until lightly golden. Remove and let cool.
- Whisk together sweetened condensed milk and Key lime juice in a medium bowl.
- Add the Key lime zest, egg yolks, and vanilla extract; whisk until smooth.
- Pour the filling into the cooled crust.
- Return the pie to the oven and bake for 15-17 minutes, until set but jiggles slightly in the center.
- Cool the pie at room temperature for about 30 minutes.
- Combine the cold heavy whipping cream, confectioners’ sugar, and vanilla extract in a large mixing bowl.
- Beat the cream mixture until stiff peaks form.
- Spread the whipped cream over the cooled pie.
- Garnish with Key lime slices.
- Chill the pie in the refrigerator for at least 4 hours or overnight.
Notes
For best flavor, use fresh Key lime juice. Chill thoroughly for optimal texture.
