Ingredients
2 cups ricotta cheese
3 cups roasted Mediterranean vegetables (eggplant, zucchini, peppers, mushrooms)
2 cups tomato sauce
2 cups shredded mozzarella
Lasagna sheets
Olive oil
Garlic
Basil
Oregano
Salt and pepper
Instructions
1. Preheat oven to 375°F (190°C).
2. Slice vegetables and roast until tender.
3. Mix ricotta with herbs and seasonings.
4. Spread sauce in a baking dish and layer pasta, ricotta, and vegetables.
5. Repeat layers until filled.
6. Top with mozzarella.
7. Bake for 35–40 minutes until golden.
8. Let rest 10 minutes before slicing.
Notes
You can swap ricotta for cottage cheese.
Use gluten-free lasagna sheets if desired.
Let the lasagna rest to firm up the layers.
