- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup granulated sugar
- 1 teaspoon grated lemon zest
- 1/4 cup fresh lemon juice
- 1/2 teaspoon baking powder
- A pinch of salt
- Additional powdered sugar for dusting
Instructions
- Prepare your pan: Preheat your oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
- Make the crust: Combine flour and powdered sugar, mix with softened butter until crumbly. Press evenly into the pan and bake for 15-20 minutes until golden.
- Prepare the filling: In a bowl, whisk together eggs, granulated sugar, lemon zest, lemon juice, baking powder, and salt until smooth.
- Combine and bake: Pour the lemon filling over the hot crust and bake for 20-25 minutes until set.
- Cool down: Let the bars cool in the pan for 30 minutes before lifting them out and cutting into squares.
- Dust with powdered sugar before serving for a decorative finish.
