  • 2 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon grated lemon zest
  • 1/4 cup fresh lemon juice
  • 1/2 teaspoon baking powder
  • A pinch of salt
  • Additional powdered sugar for dusting

Instructions

  1. Prepare your pan: Preheat your oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
  2. Make the crust: Combine flour and powdered sugar, mix with softened butter until crumbly. Press evenly into the pan and bake for 15-20 minutes until golden.
  3. Prepare the filling: In a bowl, whisk together eggs, granulated sugar, lemon zest, lemon juice, baking powder, and salt until smooth.
  4. Combine and bake: Pour the lemon filling over the hot crust and bake for 20-25 minutes until set.
  5. Cool down: Let the bars cool in the pan for 30 minutes before lifting them out and cutting into squares.
  6. Dust with powdered sugar before serving for a decorative finish.
