Ingredients

  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×9 inch baking pan.
  3. Mix together the all-purpose flour, powdered sugar, and salt in a medium bowl.
  4. Cut in the softened butter using a fork or pastry cutter until crumbly.
  5. Press the crumbly mixture evenly into the bottom of the prepared pan.
  6. Bake the crust for 15 minutes until lightly golden.
  7. Whisk together the granulated sugar, eggs, lemon juice, lemon zest, and baking powder in another bowl until smooth.
  8. Pour the lemon mixture over the baked crust.
  9. Bake for an additional 20-25 minutes until the center is firm.
  10. Cool completely in the pan on a wire rack before cutting into squares.
