A delightful low-carb dish featuring chicken breasts with a creamy mixture of garlic, mushrooms, and spinach, perfect for weeknight dinners.


Ingredients

  • 4 chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 2 cups spinach
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a baking dish with olive oil.
  3. Season the chicken breasts with salt and pepper.
  4. Heat olive oil in a skillet, add garlic and mushrooms, and sauté for 5-7 minutes.
  5. Add spinach to the skillet and cook for 2-3 minutes until wilted.
  6. Place seasoned chicken in the baking dish, and spoon the mushroom and spinach mixture over it.
  7. Pour heavy cream over the dish and sprinkle with mozzarella and Parmesan cheese.
  8. Bake for 25-30 minutes until chicken is cooked and cheese is bubbly.
  9. Serve after letting it sit for a few minutes.
