- 4 chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 2 cups mushrooms, sliced
- 2 cups spinach
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Grease a baking dish with olive oil.
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a skillet, add garlic and mushrooms, and sauté for 5-7 minutes.
- Add spinach to the skillet and cook for 2-3 minutes until wilted.
- Place seasoned chicken in the baking dish, and spoon the mushroom and spinach mixture over it.
- Pour heavy cream over the dish and sprinkle with mozzarella and Parmesan cheese.
- Bake for 25-30 minutes until chicken is cooked and cheese is bubbly.
- Serve after letting it sit for a few minutes.
