Description
Tender maple Dijon chicken served with roasted sweet potatoes in a nourishing, flavor-packed bowl.
Ingredients
2 chicken breasts
2 medium sweet potatoes, cubed
2 tbsp Dijon mustard
2 tbsp pure maple syrup
2 tbsp olive oil
2 cloves garlic, minced
Salt
Black pepper
Instructions
1. Preheat oven to 400°F (200°C).
2. Toss sweet potatoes with olive oil, salt, and pepper. Roast for 25–30 minutes.
3. Mix Dijon mustard, maple syrup, garlic, and olive oil.
4. Marinate chicken for 15–30 minutes.
5. Cook chicken in a skillet until golden and cooked through.
6. Rest, slice, and assemble bowls with sweet potatoes.
Notes
Store leftovers in an airtight container for up to 4 days.
