Description
Tender, caramelized carrots glazed with pure maple syrup and fresh thyme create a stunning side dish that’s ready in just 15 minutes. Perfect for weeknight dinners or holiday feasts!
Ingredients
1 lb fresh carrots (peeled and sliced diagonally)
2 tbsp olive oil
2 tbsp pure maple syrup
1 tbsp butter (optional for extra richness)
1 tsp fresh thyme leaves (or ½ tsp dried thyme)
Salt and black pepper to taste
Instructions
1. Pat the carrots dry with paper towels to help them caramelize nicely.
2. Heat olive oil (and butter if using) in a large skillet over medium heat.
3. Add carrots and sauté for 5–6 minutes, stirring occasionally, until they start to soften and develop light golden spots.
4. Drizzle in maple syrup, sprinkle thyme, salt (about ½ tsp), and pepper. Toss to coat evenly.
5. Cook for another 5–7 minutes, stirring frequently, until the glaze thickens and the carrots are fork-tender with caramelized edges.
6. Remove from heat and let rest for 2–3 minutes to allow the glaze to settle before serving.
Notes
For vegan version, omit the butter and use only olive oil.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
To reheat, warm in a skillet over medium-low heat with a splash of water and extra drizzle of maple syrup.
For added crunch, top with toasted pecans or walnuts before serving.
Baby carrots can be substituted but may cook 2-3 minutes faster.
Use real maple syrup, not pancake syrup, for best flavor.
