A warm, comforting breakfast casserole inspired by Martha Stewart perfect for Christmas mornings with family.
Ingredients
6 cups day-old bread cubes
8 large eggs
2 ½ cups milk or half-and-half
1 small onion, diced
1 red bell pepper, diced
2 cups spinach, chopped
2 cups shredded cheese
1 tbsp olive oil
Salt and pepper to taste
Instructions
1. Grease a 9×13 baking dish.
2. Sauté onions, peppers, and spinach.
3. Layer bread, veggies, and cheese.
4. Whisk eggs, milk, salt, and pepper.
5. Pour mixture over bread.
6. Refrigerate overnight or bake immediately.
7. Bake at 350°F for 45–50 minutes.
8. Cool 10 minutes before serving.
Notes
Use dry bread for the best texture.
Reheat leftovers in the oven at 325°F.
