A vibrant Mediterranean Marinated Cauliflower Salad packed with fresh veggies, zesty dressing, and bold Mediterranean flavors. Perfect for meal prep or potlucks!
Ingredients
1 medium cauliflower head, cut into florets
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, thinly sliced
1/2 red bell pepper, chopped
1/4 cup olive oil
3 tbsp lemon juice
1 tsp Dijon mustard
1 garlic clove, minced
1/2 tsp oregano
Salt & black pepper to taste
2 tbsp chopped parsley
Instructions
1. Blanch cauliflower florets for 3 minutes and drain well.
2. In a large bowl, combine cauliflower, tomatoes, cucumber, onion, and bell pepper.
3. In a small bowl, whisk together olive oil, lemon juice, mustard, garlic, oregano, salt, and pepper.
4. Pour dressing over vegetables and toss to coat evenly.
5. Chill for 20–30 minutes to let the flavors marinate.
6. Sprinkle with parsley before serving.
Notes
Optional: Add feta cheese for a Greek-style twist.
Store leftovers in an airtight container for up to 3 days in the refrigerator.
