This Mediterranean Orzo Salad is fresh, colorful, and full of zesty flavor—perfect for a healthy lunch or side dish.
Ingredients
1 1/2 cups orzo pasta
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, finely chopped
1 red bell pepper, diced
1/2 cup feta cheese, crumbled
1/4 cup fresh parsley or mint, chopped
1/4 cup extra virgin olive oil
2 tbsp lemon juice
1 tsp Dijon mustard
1 tsp honey (optional)
Salt & pepper to taste
Instructions
1. Cook orzo in salted water until al dente, then drain and rinse.
2. Chop vegetables and herbs into bite-sized pieces.
3. Whisk together olive oil, lemon juice, Dijon, honey, salt, and pepper.
4. In a large bowl, combine orzo, vegetables, feta, and herbs.
5. Pour dressing over salad and toss gently.
6. Chill for 15 minutes before serving.
Notes
You can substitute quinoa or couscous for orzo.
For vegan option, replace feta with plant-based cheese.
Best enjoyed cold; store in fridge up to 4 days.
