  • 1 cup long-grain rice

  • 1 cup queso (cheese sauce)
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Cook the diced chicken breast for 5-7 minutes until browned.
  3. Add the diced onion and minced garlic, sauté for 3-4 minutes.
  4. Stir in the long-grain rice, chili powder, cumin, salt, and pepper.
  5. Pour in the chicken broth and bring to a boil.
  6. Simmer covered for about 20 minutes until rice is tender.
  7. Add the queso and mix until melted and combined.
  8. Garnish with chopped cilantro before serving.

Notes
