Description
Mini banana pudding cheesecake combines creamy cheesecake with classic banana pudding flavor in perfect individual portions.
Ingredients
1 1/2 cups crushed vanilla wafers
5 tbsp melted butter
16 oz cream cheese, softened
1/2 cup granulated sugar
2 ripe bananas, mashed
2 eggs
1 tsp vanilla extract
1/2 cup heavy cream
Instructions
1. Preheat oven to 325°F and line a muffin pan.
2. Mix wafer crumbs with butter and press into liners.
3. Beat cream cheese until smooth.
4. Add sugar, bananas, and vanilla.
5. Mix in eggs one at a time.
6. Fold in heavy cream.
7. Pour filling over crusts.
8. Bake 18–22 minutes until set.
9. Cool completely, then refrigerate.
Notes
Top with whipped cream before serving.
Chill at least 3 hours for best texture.
