- 1 lb chicken breast (diced)
- 2 cups broccoli florets (fresh)
- 2 cups mushrooms (sliced)
- 1 small onion (chopped)
- 2 cloves garlic (minced)
- 2 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 1 tbsp olive oil
- 1 tsp cornstarch
- 2 tbsp water
- Salt (to taste)
- Pepper (to taste)
Instructions
- Cook rice according to package instructions. Once ready, set it aside.
- Prepare and cook chicken: Heat the olive oil in a large skillet or wok over medium-high heat. Add the diced chicken, season with salt and pepper, and cook for 5 to 7 minutes until golden and cooked through. Remove and set aside.
- Sauté aromatics: In the same skillet, pour in sesame oil, add the chopped onion and minced garlic, and sauté for 1 to 2 minutes until fragrant.
- Cook vegetables: Add broccoli florets and sliced mushrooms to the pan. Stir-fry for 4 to 5 minutes until tender-crisp and slightly browned.
- Combine ingredients: Return the cooked chicken to the pan, stir in low-sodium soy sauce, and mix well.
- Thicken the sauce: Mix cornstarch with water to create a slurry, stir into the pan, and cook for 2 minutes until sauce thickens.
- Serve hot over the cooked rice and enjoy!
Notes
Consider garnishing with sesame seeds or sliced scallions for added flavor. Pair with a side salad or steamed dumplings.
