- 2 large eggs, room temperature

- 1.5 cups all-purpose flour
- 1 tsp baking soda

- 1 cup mashed ripe bananas (about 3 very ripe bananas)
- 0.5 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Cream the butter and sugar together until light and fluffy.
- Add eggs one at a time, beating well after each addition, followed by vanilla extract and mashed bananas.
- Prepare the dry ingredients by whisking together flour, baking soda, and salt in a separate bowl.
- Combine the dry ingredients with the moist mixture, mixing until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55–65 minutes, checking for doneness with a toothpick.
- Cool the bread in the pan for 10 minutes before transferring to a wire rack to cool completely.
