Description

Ingredients

  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 cup mashed ripe bananas (about 3 very ripe bananas)
  • 0.5 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Cream the butter and sugar together until light and fluffy.
  3. Add eggs one at a time, beating well after each addition, followed by vanilla extract and mashed bananas.
  4. Prepare the dry ingredients by whisking together flour, baking soda, and salt in a separate bowl.
  5. Combine the dry ingredients with the moist mixture, mixing until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55–65 minutes, checking for doneness with a toothpick.
  8. Cool the bread in the pan for 10 minutes before transferring to a wire rack to cool completely.
