Description
A delicious and quick dish combining juicy steak bites with creamy cheese tortellini in a rich cowboy butter sauce.
Ingredients

- 1 ½ lbs sirloin or ribeye steak, cut into bite-sized cubes
- 1 tsp Cajun seasoning (or to taste)
- ½ tsp smoked paprika
- ½ tsp garlic powder
- Salt & black pepper, to taste
- 2 tbsp olive oil
- 6 tbsp unsalted butter
- 4 cloves garlic, minced
- ½ tsp red pepper flakes (optional, for heat)
- 1 tsp Dijon mustard
- Juice of 1 lemon
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 12 oz cheese tortellini (fresh or refrigerated)
- ½ cup grated Parmesan cheese
- ½ cup reserved pasta water
Instructions
- Cook the tortellini by boiling salted water, adding the cheese tortellini and cooking for 3-4 minutes until tender. Reserve ½ cup of pasta water, then drain.
- Prepare the steak bites by patting them dry and seasoning with Cajun seasoning, smoked paprika, garlic powder, salt, and black pepper.
- Heat olive oil in a skillet over medium-high heat, then add the seasoned steak bites. Sear for 2-3 minutes on each side until golden brown.
- Make the cowboy butter sauce by melting unsalted butter in the skillet, then adding minced garlic and cooking until fragrant. Stir in red pepper flakes, Dijon mustard, and lemon juice, then add chopped parsley and chives.
- Combine the cooked tortellini and seared steak bites in the skillet, tossing together in the sauce. Add reserved pasta water as needed for sauce consistency.
- Incorporate grated Parmesan cheese into the skillet, stirring until melted and creamy.
- Serve immediately, garnishing with additional Parmesan, parsley, and Cajun seasoning.
Notes
Use high-quality steak for the best flavor. Don’t overcook the steak to avoid toughness.
