Description
A quick, flavorful dish combining tender steak bites and cheese tortellini in a rich, buttery sauce, ready in just 30 minutes.

- 1 ½ lbs sirloin or ribeye steak, cut into bite-sized cubes
- 1 tsp Cajun seasoning (or to taste)
- ½ tsp smoked paprika
- ½ tsp garlic powder
- Salt & black pepper, to taste
- 2 tbsp olive oil
- 6 tbsp unsalted butter
- 4 cloves garlic, minced
- ½ tsp red pepper flakes (optional, for heat)
- 1 tsp Dijon mustard
- Juice of 1 lemon
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 12 oz cheese tortellini (fresh or refrigerated)
- ½ cup grated Parmesan cheese
- ½ cup reserved pasta water
Instructions
- Cook the tortellini by bringing a large pot of salted water to a boil. Once boiling, add the tortellini and cook according to package instructions, usually around 3-5 minutes. Reserve ½ cup of pasta water, then drain and set aside.
- Prepare the steak bites by patting the dry pieces with paper towels and seasoning them with Cajun seasoning, smoked paprika, garlic powder, salt, and black pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned steak bites and sear for 2-3 minutes on each side until browned and cooked to desired doneness. Remove from skillet and let rest.
- Make the cowboy butter sauce in the same skillet by lowering the heat to medium, adding unsalted butter, and then minced garlic. Cook for about 1 minute until fragrant.
- Stir in red pepper flakes (if using), Dijon mustard, and lemon juice. Once combined, mix in chopped parsley and chives.
- Combine everything by returning the cooked tortellini and steak bites to the skillet and tossing until well coated in the sauce. If the sauce is thick, add reserved pasta water gradually until desired consistency is reached.
- Serve hot, garnished with extra Parmesan, parsley, and Cajun seasoning if desired.
Notes
Pair with a light salad or steamed vegetables and a glass of white or light red wine. Store leftovers in the fridge for up to 3 days.
