- 1 lb Boneless, Skinless Chicken Breasts (cut into bite-sized pieces)
- 9 oz Refrigerated Cheese Tortellini
- 2 cups Seasonal Veggies (sliced zucchini, bell peppers, and cherry tomatoes)
- ½ cup High-quality Basil Pesto
- 1 cup Chicken Broth (or water)
- 2 cloves Garlic, minced
- 2 Tbsp Olive Oil
- ½ cup Freshly Grated Parmesan Cheese
- Salt and Black Pepper to taste
Instructions
- Cook the chicken: Begin by heating the olive oil in a large, deep skillet over medium-high heat. Season the chicken with salt and pepper and cook for 5–7 minutes until golden brown, then set aside.
- Sauté the veggies and garlic: In the same skillet, add seasonal vegetables and garlic, sautéing for 3 to 5 minutes until tender yet crunchy.
- Add the tortellini and broth: Pour in the chicken broth and add the tortellini. Cover and simmer for 3 to 5 minutes according to package directions.
- Combine everything: Return the chicken to the skillet and stir in the basil pesto until all ingredients are coated and heated through for 1 to 2 minutes.
- Finish with cheese: Remove from heat and sprinkle with freshly grated Parmesan cheese. Optional: garnish with fresh basil or red pepper flakes.
