Ingredients

  • Lasagna noodles
  • Ground beef
  • Ricotta cheese
  • Mozzarella cheese
  • Parmesan cheese
  • Colorful vegetables (e.g., bell peppers, spinach, zucchini)
  • Tomato sauce
  • Olive oil
  • Salt
  • Pepper
  • Italian seasoning

Instructions

  1. Heat the olive oil in a large skillet over medium heat for a minute or two.
  2. Cook the ground beef until browned, about 5 to 7 minutes, stirring occasionally.
  3. Add your chopped colorful vegetables and cook for 3 to 4 minutes until softened.
  4. Incorporate the broken lasagna noodles into the skillet.
  5. Pour in the tomato sauce and enough water to cover the noodles, stirring everything together.
  6. Mix in the ricotta cheese and season with salt, pepper, and Italian seasoning.
  7. Simmer the mixture for about 10 to 15 minutes until the noodles are tender, stirring occasionally.
  8. Add the mozzarella and Parmesan cheese on top and cover until melted.
