- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 3/4 tsp baking soda
- 1/2 tsp salt
- 24–30 pieces Miniature Reese’s Peanut Butter Cups, unwrapped
Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream the softened unsalted butter and creamy peanut butter with granulated and light brown sugars until light and fluffy.
- Add the large egg and vanilla extract, and beat until smooth.
- Mix the flour, baking soda, and salt in a separate bowl, then gradually add to the wet mixture, mixing until just combined.
- Form 1-inch dough balls and place them 2 inches apart on the baking sheets.
- Bake for 8-10 minutes until edges are golden and centers are slightly soft.
- Add a Miniature Reese’s Peanut Butter Cup to the center of each cookie immediately after baking.
- Cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for 3-5 days, or freeze for up to 3 months.
