- 0.5 cup unsalted butter, melted and cooled
- 1 cup granulated sugar
- 1 large egg, room temperature
- 1 tsp pure vanilla extract
- 1.5 cups all-purpose flour
- 1 tsp baking soda
- 0.5 tsp salt
- 1.5 cups mashed overripe bananas (about 3–4 large bananas)
- 1 cup chopped walnuts or pecans, toasted
- 0.5 tsp ground cinnamon (optional)
Instructions
- Toast the nuts in a dry skillet over medium heat for 3–5 minutes until fragrant, or in the oven at 350°F (175°C) for 5–7 minutes, and then set aside.
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Mix the melted butter and granulated sugar in a large bowl until combined, then add the egg and vanilla extract.
- Incorporate the mashed bananas into the wet mixture using a spatula.
- Sift the flour, baking soda, salt, and ground cinnamon into a separate bowl.
- Combine the dry ingredients with the wet mixture until just incorporated.
- Add ¾ cup of toasted nuts to the batter and fold gently.
- Pour the batter into the loaf pan and sprinkle reserved nuts on top.
- Bake in the preheated oven for 55–65 minutes, checking doneness with a toothpick.
- Cool for 10 minutes in the pan before transferring to a wire rack.
Notes
For best results, use overripe bananas and ensure ingredients are at room temperature. Avoid over mixing to maintain a light texture.
