Ingredients

  • 0.5 cup unsalted butter, melted and cooled
  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1.5 cups mashed overripe bananas (about 34 large bananas)
  • 1 cup chopped walnuts or pecans, toasted
  • 0.5 tsp ground cinnamon (optional)

Instructions

  1. Toast the nuts in a dry skillet over medium heat for 3–5 minutes until fragrant, or in the oven at 350°F (175°C) for 5–7 minutes, and then set aside.
  2. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  3. Mix the melted butter and granulated sugar in a large bowl until combined, then add the egg and vanilla extract.
  4. Incorporate the mashed bananas into the wet mixture using a spatula.
  5. Sift the flour, baking soda, salt, and ground cinnamon into a separate bowl.
  6. Combine the dry ingredients with the wet mixture until just incorporated.
  7. Add ¾ cup of toasted nuts to the batter and fold gently.
  8. Pour the batter into the loaf pan and sprinkle reserved nuts on top.
  9. Bake in the preheated oven for 55–65 minutes, checking doneness with a toothpick.
  10. Cool for 10 minutes in the pan before transferring to a wire rack.

Notes

For best results, use overripe bananas and ensure ingredients are at room temperature. Avoid over mixing to maintain a light texture.
