  • 4 medium zucchinis, spiralized
  • 4 tablespoons of unsalted butter
  • 4 cloves of garlic, minced
  • 1 teaspoon of red pepper flakes (optional)
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish
  • Lemon wedges, for serving

Instructions

  1. Prepare the Zucchini Noodles: Start by spiralizing your zucchini. If you don’t have a spiralizer, you can use a vegetable peeler to create thin strips. Set the noodles aside.
  2. Cook the Shrimp: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and red pepper flakes, stirring constantly until fragrant—about 1 minute. Be careful not to burn the garlic.
  3. Add Shrimp to the Skillet: Place the shrimp in the skillet, season with salt and pepper, and cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque. Remove shrimp from the skillet and set aside on a plate.
  4. Prepare the Zucchini Noodles: In the same skillet, add the remaining 2 tablespoons of butter and toss in the spiralized zucchini noodles. Sauté for about 2-3 minutes until just tender, stirring frequently.
  5. Combine and Serve: Return the cooked shrimp to the skillet with the zucchini noodles. Toss everything together until well combined. Cook for an additional minute, allowing the flavors to meld.
  6. Garnish and Enjoy: Plate your garlic butter shrimp with zucchini noodles, garnish with fresh parsley, and serve with lemon wedges.

Notes

Avoid overcooking the zucchini to prevent it from becoming mushy. This dish can be customized with additional vegetables or sauce.
