Description
A quick and flavorful cucumber salad tossed in a spicy peanut dressing light, crunchy, and refreshing!
Ingredients
2 large English cucumbers, thinly sliced
1 small red onion, thinly sliced
Β½ cup chopped cilantro
ΒΌ cup roasted peanuts, chopped
3 tbsp creamy peanut butter
2 tbsp soy sauce
1 tbsp lime juice
1 tbsp honey or maple syrup
1 tsp sesame oil
Β½ tsp chili flakes or sriracha
2β3 tbsp warm water
Instructions
1. Whisk together all dressing ingredients until smooth.
2. Slice cucumbers and onions, and chop cilantro.
3. Toss vegetables in dressing until well coated.
4. Top with roasted peanuts and serve immediately or chilled.
Notes
For extra crunch, chill cucumbers before serving.
Adjust spice level by adding more or less chili.
